Vegan Belarusian Kalduny

I loved kalduny as a child, when my mom made it for us. I veganized it and it's still delicious! You can also omit the mince and make it as simple potato pancakes, also known as draniki.

Ingredients

Batter

  • , peeled
  • , minced
  • (for example, "flax eggs": 2 tbsp ground flax seeds + 6 tbsp water)
  • other spices to taste (I like black pepper and ground coriander)

Mince

With mince, you can use any vegan mince you like, lentils or even mushrooms. Cook it however you like. I use whatever I have, but the easiest is to use store-bought vegan mince with some onions, garlic and bolognese mix:

Instructions

  1. Mince: Cook the mince with onions, garlic and bolognese mix. Set aside.
  2. Grate or Blend: Grate potatoes, onion and add all other batter ingredients to a bowl. If you have food processor, you can blend all the ingredients together without grating. It is easier and still delicious, but the texture is different.
  3. Preheat: Preheat a non-stick pan on medium-high heat.
  4. Build the Kaldun: If you have a good non-stick pan, you can fry kalduny without oil. If not, add a little oil to the pan. Make a little pancake. Add a spoonful of mince to the middle and cover with more batter.
  5. Flip Time: After 3-5 minutes, when the edges are golden, flip the kaldun.
  6. Repeat: Repeat until you run out of batter. You can make 4 kalduny at a time in a large pan.
  7. Serve: Serve with vegan sour cream and fresh dill!
